Cruciferous Curry

Ingredients

  • 1/2 cauliflower separated into small stalks
  • 1 small  broccoli separated into small stalks
  • 1 tbs grated turmeric
  • 1 tbs grated ginger
  • 1 handful of fresh coriander leaves
  • 1 bird’s eye red chilli chopped finely
  • 1 tsp ground cumin powder
  • 1 tsp ground cardamom powder
  • 1/4 tsp ground cinnamon powder
  • 1/4 tsp ground nutmeg powder
  • 1 tsp tamarind paste
  • 5 chopped tomatoes
  • 1 can of full cream coconut milk
  • 4 cups of water

 

Method

  1. Sauté cauliflower and broccoli in some coconut oil for 1 min on medium heat
  2. Add in all of the spices and stir for 1 -2 mins
  3. Pour in the coconut milk and water
  4. Stir in the tamarind paste
  5. Simmer on low heat until vegetables soften
  6. Add tomatoes and simmer for 2 minutes
  7. Add salt and pepper to taste
  8. Garnish with fresh coriander
