Ingredients
- 1/2 cauliflower separated into small stalks
- 1 small broccoli separated into small stalks
- 1 tbs grated turmeric
- 1 tbs grated ginger
- 1 handful of fresh coriander leaves
- 1 bird’s eye red chilli chopped finely
- 1 tsp ground cumin powder
- 1 tsp ground cardamom powder
- 1/4 tsp ground cinnamon powder
- 1/4 tsp ground nutmeg powder
- 1 tsp tamarind paste
- 5 chopped tomatoes
- 1 can of full cream coconut milk
- 4 cups of water
Method
- Sauté cauliflower and broccoli in some coconut oil for 1 min on medium heat
- Add in all of the spices and stir for 1 -2 mins
- Pour in the coconut milk and water
- Stir in the tamarind paste
- Simmer on low heat until vegetables soften
- Add tomatoes and simmer for 2 minutes
- Add salt and pepper to taste
- Garnish with fresh coriander
